Aubergine with a Chilli and Lime Dressing. This recipe appealed the second I saw it in the new BBQ Cookbook. Check it out on Cookidoo Recipe Platform. You cook the Aubergine on the BBQ first while you make the dressing in the Thermomix. Might even make it to my Christmas 🎄 Day menu list 👌

Today I got to deliver some frozen meals to a family post a sudden serious health scare op. Most of the meals we make at our Cook Ups are taken to people with family members in hospital via social workers. However, it’s lovely to be able to help others directly in stressful situations with some healthy nutritious meals. 😍

3-4 times a year I help with a charity programme called Cooking for Others. My role is devising healthy recipes which we cook from scratch using my trusty sous chef - my Thermomix. This time I was assisted by Praise plus we had a class of NZMA students working with us in their massive commercial kitchen. We made Hungarian Goulash and Mexican Stew. We make 1500 meals in a day and on day 2 they get packaged up and frozen. The meals are for people in crisis situations and the majority go to the NICU and PICU wards at Starship Hospital via social workers and the rest as and when we hear of a someone who is under duress and needs some help.

Here’s a great summery/Christmasy salad. Simple and easy to make. The Sherry Vinaigrette dressing makes it extra special. Everyone loved it at our recent “Spectacular Sides” workshop.

Yesterday at our Foodie Friday workshop we had a Mexican theme. We made tortillas, “Family Beans” and guacamole. I often include the Family Beans mixture when we do a Mexican theme and meat eaters and vegetarian’s alike love it as was the case again yesterday with everyone intending to go home and start including this in their repertoire.

At our Thermomix Cooking Experiences each of the guests gets to have some hands on play with the Thermomix. So much more fun than sitting and watching. And look what the lovely Sonia made! San Choy Bau which is a @_matt_sinclair recipe. Anyone hosting a Cooking Experience and including one of four recipes he’s designed especially for us, goes into the draw for a trip to Noosa to Matt’s award winning restaurant @sumyungguys 😊 Everyone who’s been raves about it. If you’re heading over to Noosa you need to book well in advance to get in!
